Super Powered Snackers; My First Recipe
Ok, so Monday I told you that I came up with my own dessert ball. I felt like I should make something healthy after eating all those (delicious) gummy candies, so I figured what the hey and gave it a whirl.
These little beauties were inspired partly by all of Averie’s yummy dessert balls and by the super foods tutorial that Meghan just did.
Like pretty much every date ball type recipe Averie’s require nuts as the dry keep the dates together ingredient. At least that’s what I think the nuts are for. Anyways, I can’t actually eat nuts, well, unless they’ve been soaked and dehydrated (to make them crunchy again). It takes (roughly) 8-10 hours to soak the nuts and then another 12-24 to dehydrate them. That is a whole lot of planning ahead and if you’re a regular you know planning ahead isn’t so much my thing. Hehe
What I loved about the dessert balls (ok does anyone else laugh every time I write “balls”? sorry) is that they were basically good for you. So after reading Meghan’s tutorial I wondered if I could 1) make them even healthier and 2) replace the nuts.
So here’s what I came up with to use: shredded coconut, goji berries, chia seeds, dates, cacao and honey. I think these would count as raw but definitely not vegan since they have honey. You could always take the honey out and replace it with agave or some other sweetener.

Now that you know why I chose what I chose, onto how I made them. You can bet it was easy because otherwise I wouldn’t have even bothered. ;)
Super Powered Snackers
First I ground the coconut and goji berries
Then I added the dates and honey and ground again
Last I added the cacao and chia seeds and ground one more time.
Scoop out the mixture and either roll into balls or press flat for bars and you’re done, easy peasy. 
I love the flavor combinations and the added texture that these have, I’m really into texture when it comes to food. I keep mine in the fridge and you can even freeze them to make them last longer.
If you go to the store and buy a raw food bar it’ll run you close to $3 a pop, so even though some of the super food ingredients are a little pricy you don’t need much and in the end will definitely save money.
I actually just saw posts on A Bitt of Raw, Gluten-Free Vegan Family & Loves Veggies and Yoga about Better Than Roasted Nuts that are soaked and dehydrated. Those are 3 blogs that I am sure to check regularly so if those ladies all like them, I may just have to check them out.
The next thing I’d like to do with my snackers is experiment with adding protein powder to them. My next DIY food projects are going to be making my own kombucha and to grow my own mushrooms. Two things I love but can be pretty pricy to have on a regular basis if I’m buying them at the store.
I have a Twitter friend who has kombucha starters and can give me instructions and I’ve seen mushroom kits online. Now that I’ve taken the gardening plunge and had some success with my healthy little snack, I’m feeling adventurous and the idea of making fermented tea is just kind of cool.
If you try making these snackers I’d love to hear how it goes. Also, I’d love to know if you’ve tried making kombucha or growing mushrooms and any tips you could give me.

i have always wanted to grow mushrooms too. sounds fun! you just get a log and they grow!
i have done kombucha but the results were not that great. i will have ot try again sometime.

I'll have to give it a try, but I'm worried I'd eat the whole lot of them in one sitting. They sound delicious!

nuts, yes, they help "dry up" and bind the dates together but you could sub in coconut flakes, seeds, other really dry fruit bits, i.e. old raisins LOL just something to get some sticking/cohesive power.
